225g/8oz self-raising flour
100g/4oz mixed dried fruit
50g/2oz caster sugar
1 medium egg
milk to taste
Mix flour and salt, rub in butter.
Stir in fruit and sugar.
Add egg and mix; add enough milk to make it a stiff dough.
Make heaps (about 1 spoonful of mix per heap) on greased baking trays.
Bake at 200C (400F) for about 10-15 minutes until rock buns are lightly browned.
This recipe works with gluten-free self-raising flour.
