Potato pie (the original)

Bit difficult, this one - I (SunKitten's mother) do it by feel!!!  If it is for 2, take the amount of potato you think you will eat each.  Add one more spud because you always eat more!!  Peel and slice thinly.  Peel and chop an onion (one medium to big one for 2 people).  Grease a tray well (tray needs to be wide and shallow) (marge makes the pie creamier) and layer the potato and onion bits in it.  Scatter salt and pepper on top and then pour milk on it all till the milk layer is just visible, but do not flood it.

Put in oven at 300 for 2 hours, or 350 for less time, until the potato is done (test with a knife) and top crisp. About 2 hours for 300, less for 350.

Lots of adaptions are possible - you can put grated cheese on top, or even use cheese as one of the layers, though I find the taste of the cheese gets lost and using it as layers is a waste of cheese.  You will get to know what size of tray is OK for the amount of spud you have - also cooking times - you just have to work it out by trial and error. You can also slice sausages and cook them in the layers, or I have used pork bits.  Scatter herbs in the layers etc etc
