Rock cakes or buns
 
Cooking time: 12-15 minutes
Oven temperature: 425-450"F. Gas Mark 6-7
8 oz. self-raising flour - 4 oz. margarine
4 oz. castor sugar - 4 oz. dried fruit - 1 egg
approximately 2 tablespoons milk.
TO GLAZE: little sugar.
 
Sieve the flour into bowl, then rub in the margarine until the mixture looks like fine breadcrumbs.  Add the sugar, dried fruit, beaten egg and enough milk to give a sticky consistency.  Put the mixture in 12 small 'heaps' on to well greased baking trays or one large tray, allowing room for the mixture to spread out.  The easiest way to do this is with two spoons or forks - do not make the cakes too smooth on top.  Dust the tops of the cakes with sugar before baking.  Bake in a hot oven for approximately 12-15 minutes.  Allow the cakes to cool for a few minutes on the baking tray, then lift on to a wire cooling tray. Eat when fresh.

Tip - use dark brown sugar instead, especially to glaze.
