4-5 large ripe pears (Which would be a jar of home-preserved ones, or about a large tin of commercial ones, I guess.) 1 tbsp lemon juice
10 level tbsp (1/2 pint) flour 6 level tbsp vanilla sugar (Could use caster, and add a touch of vanilla essence.) 4 tbsp oil 8 tbsp milk 2 whole eggs pinch salt
2oz butter (In the original recipe, but my mother leaves it out.)
Peal, core and slice pears. Sprinkle with lemon juice. Mix batter ingredients. Grease a 25cm (10") flan tin, and arrange pear slices. Pour in batter. (Original had these two in the other order) Dot with butter. (Optional.) Bake for 50 mins at 200 degrees.
