Serves about 4 large portions, depending on glass (and stomach) size... 4 egg yolks 60g caster sugar 100ml Marsala
Whisk egg yolks and sugar together in a large heatproof bowl until pale and creamy, add the Marsala and beat until bored. Put the bowl over a pan of simmering water and heat gently, whisking until it becomes very thick and creamy and stands in soft peaks (use a hand-whisk for this, not an electric one) Pour into glasses and serve (with sponge fingers or other dessert biscuits if you like)
