I disagree that fanservice is a deciding factor. AzumangaDaioh has fanservice in it, as does Mahoromatic, ChoBits? and IMyMeStrawberryEggs. I would class all four as shoujo based on their plot and character interactions, not on the external mechanism of the story. The same is true for Eva and FMP - yes, they both have a bit of fanservice and mecha combat, but the real plot (as opposed to the fighty stuff) is the interactions between the characters, so I class them as shoujo. The modern anime market has become a bit confused on this issue - it's a common debate in anime NewsGroups, because many recent series are a mix of both and somewhat unclassifiable. The definition I would prefer to go by is the origin of the story (usually manga but not always). For example, I could be confused about GreatTeacherOnizuka, but since it comes from the manga published in ShounenJump, I class it as shounen. What this makes Eva and the others, I don't know, because I'm unaware of their origins.
The other definition I use (and the one I used in classifying Eva et al) is 'shoujo anime has plot and interesting characters and is not a showcase for fanservice or fights or shiny weaponry'. However, there's a better word for such anime that avoids the tangle of debate and doesn't bother with the origin of the story and that is 'good' :) - SunKitten
PS HoshiNoKoe? is Voice of a Distant Star, the amateur-produced anime that we watched a little while ago. I'm 99% certain you were there..
